This is a favorite, and very healthy chili recipe that my mom used to make and now I make it all the time – especially in the winter. It originally called for ground beef, but I use ground turkey breast and it’s still awesome,  just like a ROCK-STAR!

  • 2 Tbsp Chili Powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 cups sliced mushrooms
  • 1 cup diced onions
  • 1 cup chopped celery
  • 1 lb. ground beef, or ground turkey breast – (or none if you’re a vegetarian)
  • 2 – 28 oz. cans tomatoes (whole, diced, etc.. whatever your preference)
  • 1 Tbsp. sugar (optional)
  • 1 tsp. Worcestershire sauce
  • 1  – 15 oz can Chili beans
  • 1 – 15 oz can Kidney beans

Use a large dutch oven (stove top type) or large pot and brown your ground beef/turkey, drain off fat.  Add chopped onions and brown slightly, then add rest of ingredients and let simmer for 25 minutes!   Quick, easy AND healthy!  I usually serve with corn meal muffins – my kids love ’em!  Enjoy.
